Course Synopsis:

The Diploma in Patisserie and Baking is tailored for aspiring pastry chefs, offering a comprehensive blend of theoretical knowledge and hands-on practical training in the kitchen. Learners will gain the expertise to design and create a wide range of breads, cakes, pastries, and Asian desserts.

Course Objectives:

Upon completion of the course, learners will be able to:

  • Set up the kitchen and prepare equipment, ingredients, and pre-mixes.
  • Design, prepare, and bake various breads, including basic, artisan, and decorative breads.
  • Design, prepare, and bake an assortment of pastries, such as short-crust, choux, and puff pastries.
  • Design, prepare, and bake diverse cakes, ranging from basic to advanced and decorative cakes.
  • Design, prepare, and bake quick bakes like cookies, muffins, scones, and macarons.
  • Design and prepare a variety of hot and cold Asian desserts, including Chinese dim sum.
  • Demonstrate essential soft skills, including communication, creativity, teamwork, and work ethic.

Course Structure:

The course comprises six modules and a six-month internship, providing extensive hands-on experience and practical knowledge essential for a successful career in patisserie and baking.
